An action packed, hands on day focusing on the core skills of the patissier. From pate sucree, choux and puff pastry to creme patissiere and genoise sponge. Jenny helps you successfully produce a delicious selection of cakes & pastries fit for a patissiers window.
The types of dishes you will be making include:
- Chocolate eclairs & caramel choux
- Fresh fruit tart
- Fraisier gateau
- Danish pastries
Skills include choux pastry, rough puff pastry, pate sucree, creme patissiere, genoise sponge, gelatine, fruit glaze, caramel, chocolate ganache
