Game is a plentiful lean, healthy meat available through the late summer, autumn and winter in Scotland.  It is at it's very best at the beginning of winter, but needs careful cooking to avoid being dry and tough.  On this half day class, Jenny focuses on how to prepare and cook game to it's best advantage.
With lots of hints, tips and recipe ideas, the types of dishes you will be making include:
Game Sausages
Rabbit Meatballs
Pigeon Breasts Saltimbocca
Pheasant Terrine
Skills covered include:  Boning and portioning a rabbit, pigeon & pheasant, sauteeing, sausages, casseroling, sauces, stock, soup, knife skills, cooking with herbs
